Cheddar Bacon Beer Dip
Serve with warm soft pretzel bites! I live near Philadelphia and I’m not a fan of soft pretzels overall, they normally just don’t do it for me… BUT… when serving this dip we usually pick up some Rivets from Philly Pretzel Factory (yes I am being lazy) to pair it with and they make this taste even better than eating off tortilla chips or heaven forbid vegetables.
This is also an easy recipe to double if you have a large audience. Just add the extra ingredients and a whole bottle of beer right into the crock pot and maybe increase the cooking time by 20 mins. Reserve a little extra bacon and onion if you spoon out separate servings so that you can dress it up each time.
Lastly, try some other beers or ales, but steer clear of dark varieties. I’ve made this a half dozen times and thus far the best flavor has come from Fat Tire Belgian White beer.

Cheddar Bacon Beer Dip
This easy crock pot Bacon Cheddar Beer Dip served with soft pretzel bites will knock the socks off at any gathering.

18 oz cream cheese, softened 1/4 cup sour cream 1 1/2 tbsp dijon mustard 1 tsp garlic powder 1 cup amber beer, Belgian white beer or nonalcoholic beer Fat Tire Belgian White is my preference 2 cups cheddar cheese (shredded) 1 lb bacon (cooked and crumbled) 1/4 cup heavy whipping cream 1 green onion (thinly sliced) 60-80 Soft pretzel bites Philly Pretzel Factory Rivets
Cook bacon and dry with paper towels, then crumble up to 24 hours before hand.
To prevent sticking, grease the inside of the crock pot with Pam or other non-stick cooking spray
In crock pot, combine softened cream cheese, sour cream, mustard and garlic powder until smooth.
Stir in beer, cheddar cheese and all but 2 tablespoons bacon. Cook, covered, on low, stirring occasionally, until heated through. Approximately 2-3 hours.
In last 30 minutes, stir in heavy cream. Top with onion and remaining bacon and serve with soft pretzel bites.
