Pimento cheese spread is a southern classic and something I’ve eaten since I was a child in Virginia. This makes a great appetizer when slathered on crackers, as a dip with celery, a topping on burgers, or my favorite as a simple pimento cheese sandwich.
Keys to Make this Great…

DUKE’s Mayonnaise… the consistency and flavor make this the go to choice. Normally I don’t care about name brand, and others will work, but I find this to be the best and most flavorful option.
I can’t stress this enough, use GOOD cheddar cheese. Forget the store bought pre-shredded stuff this time. I’m a big fan of the flavor of Cabot Three Year Cheddar which is available at my Costco in roughly a two pound block at $5.79 a pound. The one problem is that it is a white cheddar and Pimento Cheese needs to be orange in color for me. Therefore I use half white cheddar and half yellow, but find what works for you, just make sure the cheese is good.
If you want to spice it up add a little finely diced jalapeno to give it some kick.
I add the scallions to mine and while I know that it isn’t traditional I think it has a subtle enhancement to the flavor.
Lastly I’ve been known to use it as a topping on a burger instead of some other kind of cheese. It gets nice and gooey from the warmth of the patty.

Pimento Cheese Spread
INGREDIENTS
- 3 cups freshly shredded cheddar cheese
- 4 oz diced pimentos finely chopped if using jarred pimentos drain thoroughly
- 2/3 cup Duke’s mayonnaise
- 4 oz cream cheese
- dash seasoned salt
- 1 scallion finely diced optional
INSTRUCTIONS
- Combine all ingredients in a large bowl
- Refrigerate for at least one hour
- Use as a topping for burgers, a dip for veggies/crackers, or on bread for a pimento cheese sandwich.
