It’s hard to find a good turkey meatloaf, but this tasty, moist, and tender dish is healthier than ground beef and loaded with flavor. The onions and green pepper add a little crunch and my kids eat it without complaint.

This is an easy recipe to double, just make sure to vary your cooking time accordingly, if it is thicker, so that the internal temperature gets to 165°.
If you are worried about the meatloaf being to dry, here are three modifications you can try.
- add an additional whole egg, lightly beaten
- spread a layer of ketchup on top prior to cooking
- make sure to not over cook, and start checking the internal temperature after about 30 minutes of baking.

Turkey Meatloaf
INGREDIENTS
- 1 lg egg white, lightly beaten
- 1/2 cup quick oats or oatmeal
- 1/2 cup chopped green pepper
- 1/4 heaping cup finely chopped onion
- 3 tbsp ketchup
- 2 tbsp chopped ripe olives
- 1 tbsp Worcestershire sauce
- 1 garlic clove, minced
- 1/2 tsp Dijon mustard
- 1/4 tsp celery salt
- 1/4 tsp rubbed sage
- 1/4 tsp ground black pepper
- 1 1/4 lb 93% lean ground turkey (ground turkey only comes in 1.3lb packages at my grocery store, but the extra doesn't hurt)
INSTRUCTIONS
- Preheat oven to 375°
- Coat an 11x7-in. baking dish with cooking spray and set aside.
- In a large bowl, add all ingredients except turkey and mix together.
- Add turkey; with your hands mix lightly but thoroughly.
- Form turkey mixture into a loaf and place into baking dish.
- Bake, uncovered, until a thermometer reads 165°, 40-50 minutes.
