Turkey Meatloaf

It’s hard to find a good turkey meatloaf, but this tasty, moist, and tender dish is healthier than ground beef and loaded with flavor.  The onions and green pepper add a little crunch and my kids eat it without complaint.

This is an easy recipe to double, just make sure to vary your cooking time accordingly, if it is thicker, so that the internal temperature gets to 165°.

If you are worried about the meatloaf being to dry, here are three modifications you can try.

  1. add an additional whole egg, lightly beaten
  2. spread a layer of ketchup on top prior to cooking
  3. make sure to not over cook, and start checking the internal temperature after about 30 minutes of baking.
