Turkey Meatloaf
It's hard to find a good turkey meatloaf, but this tasty, moist, and tender dish is healthier than ground beef and loaded with flavor.

- 1 lg egg white, lightly beaten
- 1/2 cup quick oats or oatmeal
- 1/2 cup chopped green pepper
- 1/4 heaping cup finely chopped onion
- 3 tbsp ketchup
- 2 tbsp chopped ripe olives
- 1 tbsp Worcestershire sauce
- 1 garlic clove, minced
- 1/2 tsp Dijon mustard
- 1/4 tsp celery salt
- 1/4 tsp rubbed sage
- 1/4 tsp ground black pepper
- 1 1/4 lb 93% lean ground turkey (ground turkey only comes in 1.3lb packages at my grocery store, but the extra doesn't hurt)
Preheat oven to 375°
Coat an 11x7-in. baking dish with cooking spray and set aside.
In a large bowl, add all ingredients except turkey and mix together.
Add turkey; with your hands mix lightly but thoroughly.
Form turkey mixture into a loaf and place into baking dish.
Bake, uncovered, until a thermometer reads 165°, 40-50 minutes.
